Wheat and gluten free baking
Anyone suffering from a wheat or gluten intolerance will tell you the thing they miss the most is cakes and bakes and, of course, bread. The Angela Day helpline often gets requests for recipes that are gluten and wheat free.
Besides our own recipes, I also tested three from a very helpful book, Seriously Good Gluten Free Baking by Phil Vickery.
The book has many tips for baking with gluten-free ingredients and although some of the flours the British chef calls for were quite hard to track down, I did manage to find them all here.
Vickery has three basic flour mixtures which are suitable for cakes, pastries and breads. I tried one of the baking mixes as well as the bread mix.
The cakes and pastry made with the mix were very successful and looked and tasted like the ones made with conventional wheat flour.
The bread I made was not quite like conventional bread and had a more cake-like texture. The taste was good, though, and the slices toasted well.
Most of the ingredients I sourced from the health food section of my local supermarket, and some were available at Dis-Chem and health food shops.
Ingredients like xanthan gum and guar gum act as a gluten replacement and help add elasticity to the dough.
Both these gums are available at Dis-Chem.

700g white rice flour
200g potato flour
100g tapioca flour
Bread FLOUR mix
400g soya flour
200g tapioca flour
400g potato flour
300g corn flour
Sift the ingredients to combine them and store in an airtight container.

Peanut butter will provide your campers with plenty of protein and fiber – just remember to take note of any particular allergies before blanketing your camp with the stuff!
3. Baked Goods
You’re probably asking yourself, why would somebody in public health endorse baked goods as a healthy snack? And you’re right to wonder – in most cases. But, there are some healthy baked treats that are always a hit with children.
Your children won’t suspect that you’re sneaking fruits or vegetables into the diet when you bake them into muffins! Banana bread, zucchini muffins, and carrot bars are a few great choices for kids. Many muffins with fruit and vegetables contain beta-carotene and potassium, too.
4. Pears
Rich in fiber and available year-round, pears come in many delicious varieties. Serve up nutritious pears from a farmer’s market, where you can both shop local and keep costs down, with a small bowl of low-fat cottage cheese or send a pear with every child on their way out to a day camp.
Build their dietary habits to include fruit and vegetables from an early age, and it seems like less of a chore as kids get older!
5. Raisins
Raisins have a lot of good things going for them, including great ingredients like fiber, potassium, and an assortment of different vitamins. They’re cost-effective, have a fun texture, and they don’t make a mess – could you ask for more?
